This recipe is perfect for anyone who has an abundance of mint growing in their garden. It’s a great addition to grilled chicken, add it to your favorite grains and veggies or drizzle it over some new potatoes. You can’t go wrong! This recipe comes from the cookbook Love & Lemons Every Day.

Ingredients

1/2 cup pumpkin seeds

1/2 cup mint leaves

1/4 cup parsley

1/2 cup thawed frozen peas

1 small garlic clove

2 tablespoons fresh lemon juice

1/4 teaspoon salt

1/4 cup extra virgin olive

Creating the Magic!

Place all the ingredients in a food processor apart from the olive oil. Process to a coarse puree. With the blade running, pour in the olive and oil and process until combined.

Makes about 1 cup.
