oh so easy almond milk

Trust me when I say that almond milk is so easy to make. All you need is time (which we currently have a lot of !) and a nut milk bag. (or a cheesecloth could work too). So put some almonds in a bowl with lots of water and in 24 to 48 hours you will have your very own almond milk! The hardest thing about making almond milk is thinking ahead and remembering to soak the almonds a couple of days before you actually want to drink the milk!

Ingredients

1 cup of unsalted almonds (preferably organic)

3 cups of water

Vanilla extract to taste

Cinnamon to taste

Maple syrup (or you can use a couple of dates for sweetness instead)

Pinch of salt

Nut milk bag or fine mesh cheesecloth

Creating the Magic!

Place your almonds in a bowl and cover with a couple of inches of water . If you can, soak for 24 hours to 48 hours. The longer you leave the almonds to soak, the creamier the milk.

Once you are ready to make the milk, rinse and drain the almonds. Place the rinsed almonds in a blender with about 3 cups of fresh water.

Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk. This process can take a few minutes so be patient! You will be left with about 1/2 cup to a cup of almond meal in the nut bag.

Rinse out blender and pour the milk back in. Slowly add the cinnamon, vanilla and maple syrup to taste. Taste and add more sweetness and spices as wanted. I personally like unsweetened almond milk as I eat it with sweetened vanilla granola. So I just add a little maple syrup and some cinnamon.

Using a funnel, pour into a large glass jar and secure lid. Store in the fridge for up to 3 to 4 days. I recommend storing in the coldest spot in the fridge (typically the back) rather than on a door. Shake the jar very well before drinking as the mixture separates when sitting.
