peanut butter cookie dough balls
Do you love peanut butter? Then you will love these energy balls. Even my daughter, who doesn’t like peanut butter, loves them! This recipe comes from the cookbook Oh She Glows by Angela Liddon and has become a staple in our house. They are vegan, don’t require cooking and can also be gluten free (if your oats are gluten free). What’s not to love.
Makes about 14 small balls
Ingredients
1 1/2 cups of oat flour *
2 tablespoons of melted coconut oil
2 tablespoons of smooth peanut butter (or almond butter)
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1/2 cup almond meal/flour
1/4 teaspoon sea salt
2 tablespoons chocolate chips (mini is preferred)
Creating the Magic!
Combine the oil, peanut butter, maple syrup and vanilla in a bowl and beat until smooth. Use a hand mixer if needed. Add the almond flour, oat flour and salt and beat until well combined. Fold in the chocolate chips.
Roll the dough into small balls. If chocolate chips fall out, then press them back in. Place the finished balls on a plate. Freeze the balls for 5 to 10 minutes to firm up before eating (or just place them in the fridge if you have more time). Store in the fridge.
* Oat Flour - If you can’t find oat flour, then you can make oat flour by adding oats to a food processor and processing until you have a fine flour. It’s hard to get the oats super fine. Purchasing already ground oat flour is preferable and makes for a better end product if you can find them.
