pomegranate, orange and ginger

I spent the month of November experimenting with different mocktails as I choose to give up alcohol for the month. It was fun to try new drinks and experiment with different mindful techniques to help me relax instead of simply reaching for a glass of wine and expecting it to do the trick. I learned that a lot of mocktails are laced with sugar. I love this drink as it has no added sugar and is super simple to make. I make up a batch and keep it in the fridge for a couple of days and then simply add some sparkling water when I am ready to drink it.

Serves 2

Ingredients

1 medium orange

1 teaspoon finely grated ginger

1 cup pomegranate juice

4 cups sparking water

Creating the Magic

Zest and juice the orange. Peel some ginger and finely grate it into the orange juice. Add the pomegranate juice to the orange mixture. If drinking immediately, add sparkling water. Otherwise, simply pour the pomegranate juice into a glass jar and leave it in the fridge. Add the sparkling water when you are ready to drink it. Enjoy.
