arugula pesto

Roasted veggies, pesto and pasta salad

I love making different types of pesto and keeping them on hand to ask to dishes during the week. Add pesto to a tray of roasted veggies, spread on a sandwich, mix with pasta for a quick meal…the options are endless! Arugula pesto is peppery, earthy and refreshing. This recipe comes from Love and Lemons and is dairy free. You can also make a traditional arugula pesto using Parmesan cheese, arugula, olive oil and garlic.

Ingredients - Serves 4

  • 2 cups arugula

  • ½ cup raw cashews

  • ⅓ cup extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons water

  • 1 small garlic clove

  • Heaping ¼ teaspoon sea salt

  • Freshly ground black pepper

Creating the Magic!

  • In a blender or a food processor, combine the arugula, cashews, oil, lemon juice, water, garlic, salt, and several grinds of pepper and blend until creamy.
