date and orange breakfast bars

These baked bars are a great morning treat. Plus they only have 9 ingredients! They are also gluten free and vegan. Baking the mixture makes it feel like a decadent baked treat but it’s super healthy. Even Matt likes these! This recipe came from Deliciously Ella.

Ingredients

150g (1 cup) almonds

100g (1 cup) pecans

5 Medjool dates (about 100g)

50g (1/4 cup) raisins

50g oats

Zest and juice of 1/2 orange

Pinch of ground nutmeg

1/2 teaspoon cinnamon

Large handful (20g) of dried cranberries

Creating the Magic!

  1. Preheat the oven to 180C (350F).

  2. Place the almonds and pecans in a food processor, taking a handful aside to roughly chop in a moment. Blend the nuts into a ground flour before adding the rest of the ingredients (except the cranberries).

  3. When the mixture is very sticky and gluing itself to the sides of your food processor, roughly chop the nuts and throw them in with the cranberries and give it a final mix by hand.

  4. Line a baking tray with greaseproof paper and using a spoon, press the mixture evenly into a layer about 1/2 inch thick.

  5. Bake in the oven for 8-10 minutes, they should be golden and still a little soft when they come out of the oven but they will firm up as they cool.

  6. Store in a Tuppaware box in the fridge for up to a week or in the freezer fo a month. Enjoy fresh out the oven or reheat in a microwave if you want a little warm snack!
