triple chocolate chip cookies (gf)
By now you have probably guessed that I love all things chocolate! A friend made these cookies and I was immediately hooked. I love eating them as soon as they come out of the oven - they are warm and the chocolate melts in your mouth. Ideally use a minimally processed cocoa powder or raw cacao powder (check out this blog to understand the difference). This recipe comes from the blog Elana’s Pantry.
Ingredients
2½ cups blanched almond flour (not almond meal)
¼ cup unsweetened cacao powder
½ teaspoon celtic sea salt
½ teaspoon baking soda
½ cup palm shortening (I used regular butter and they turned out great!)
¼ cup honey
½ cup chocolate chips
½ cup milk chocolate chips
½ cup white chocolate chips
Creating the Magic!
In a large bowl, combine almond flour and cacao powder.
Stir in salt and baking soda.
In a medium bowl cream together shortening and honey.
Stir wet ingredients into dry.
Fold in all chocolate chips.
Scoop dough 1 tablespoon at a time onto 2 parchment paper lined baking sheets.
Flatten dough with the palm of your hand.
Bake at 350°F for 7-10 minutes.
Cool and serve.
